INGREDIENTS

FOR THE CHICKEN 

FOR GARNISH 

  • 1/4 Large Orange 
  • 3 Sprigs Rosemary 
  • 3 Sprigs Thyme 

 

DIRECTIONS

  1. Rub the chicken on all sides with the oil and seasonings. Place the chicken upright on your vertical roaster.  

  2. Place in a small roasting pan and add enough chicken stock or water to come about 1/4-inch up the side of the pan.

  3. Roast until the juices run clear and the chicken reaches an internal temperature of 165 degrees F, 1 hour to 1 hour and 15 minutes. 

  4. Remove from the oven and carefully transfer from the roaster to a platter. Let rest for 10 minutes before carving.  

  5. To serve, carve the chicken into pieces. Garnish with orange, rosemary, and thyme. Enjoy!
